Cuban Black Bean Soup

If you’re looking for a hearty meatless meal this one is for you.  Pureed black beans, salsa, and cumin are the base for this tasty Cuban soup.  Serve in bread bowls, provided.

Cooking Instructions

Thaw completely.  Pour contents of onion bag into large saucepan and sauté over medium heat for 3 minutes.  Slowly pour the contents of soup bag into the pan.  Bring soup to boil over medium high heat.  Reduce heat to low and simmer for 15 minutes stirring occasionally.  For a smoother consistency, place half of soup mixture in a food processor or blender and process carefully, as liquid will be hot.  Serve in Atkins Sourdough Bread Bowls, provided.
