Family Style Shrimp and Rice

This dish goes together quickly for a weeknight meal and also travels well, once it is put together, for a simple pot-luck dish.  The shrimp is sautéed with peppers, onions and garlic.  Then blended with a creamy sauce, including salsa, and low fat cheddar and rice.  A creamy and delicious family friendly meal that is sure to please even the pickiest eater.

Cooking Instructions

Thaw completely.  Cook rice according to instructions.  Spray a large skillet with cooking spray.  Sauté shrimp and bag with onions over medium heat for 5 – 7 minutes.  Add salsa mixture to pan.  Stir in the cheddar cheese and cooked rice until cheese is melted and well combined.
