Boneless, center cut, pork chops are rubbed with garlic, ginger and a touch of curry powder. While you grill (or broil them) the compote (warm fruit salsa) goes together on the stovetop. The sweetness of the diced peaches compliments the natural sweetness of the tomato. Serve with white or brown rice provided.
Thaw completely. Preheat grill to medium heat. Evenly rub spices onto both sides of the pork chops. Grill Pork chops about 7-9 minutes on each side, or until internal temp reaches 160*. Meanwhile, in a sauté pan over medium/high heat; sauté onions in 2 tablespoons of Olive Oil for about 5 – 7 min. or until onions start to caramelize. Add tomato/peach bag to pan. Sautee for another 4 minutes. Serve pork chops with compote.
