Fix it and forget it…for 4-5 hours anyway!! When you layer these ingredients in your crock-pot a wonderful and easy dish is the result. Cooked ground beef, pepper jack cheese, and corn tortillas blend with Salsa Verde to make a flavorful but not too spicy Mexican feast.
Thaw completely. Spray a medium/large crock pot with cooking spray. Layer ¼ Cup salsa verde, 4 corn tortillas (tearing if necessary), 1/3 of beef mixture, another ¼ cup salsa verde and ¼ cup of cheese. Repeat twice using 3 tortillas instead of 4. Sprinkle with the paprika on the top. Cover, cook on low for 4 ½ - 5 ½ hours. Let stand 5 minutes before serving.
