Thaw completely in refrigerator. Remove pork medallions from bag. Place pork and vegetable bag contents into crock pot and cook covered on low for 6-8 hours or high 4-5 hours. During last 30 minutes of cooking time, remove ¼ cup or liquid from crock pot and slowly whisk in the cornstarch. Then slowly stir mixture back into the crock pot until gravy is formed. Serve over rice provided.
