This kid friendly dish combines the flavors of Chili and corn bread. You can spice this one up with chopped jalapenos if you want. A stick to your ribs, comfort food. Top it off with salsa and sour cream if desired. Perfect with a fresh green salad.
Thaw completely in refrigerator. Grease a 2 Quart baking dish or 10 Inch Pie Pan. In a medium skillet cook pepper/onion mixture until tender. Stir in contents of bean bag into skillet. Heat through. Spoon bean mixture into prepared dish. Make corn bread topping according to instructions. Spoon cornbread mixture evenly over top of bean mixture. Bake uncovered in a 400 degree oven for about 45 mins or until golden.
Chili Cheddar Corn Bread Topping:
In a small mixing bowl, combine the cornmeal mixture with the cheese corn mixture. Stir until lightly combined. Add the oil/egg mixture, stir just until everything is combined, do not over mix. The batter will be very stiff. Follow instructions for Two Bean Tamale Pie.
