Boneless center cut pork chops are coated with Parmesan and Cajun seasonings. Then they are braised with whole kernel corn and diced tomatoes.
Thaw completely. Pour liquid egg into a shallow dish. Pour Parmesan mixture into another shallow dish. Preheat a large skillet; with 2 tablespoons of Olive Oil.A couple at a time; coat chops with egg, then in parmesan mixture. Fry chops 3 mins on each side; remove from pan. Pour broth and vegetables into pan. Gently scrape browned bits from the bottom; reduce heat to medium low. Return chops to pan. Simmer covered; 15-20 mins or until chops read 160 degrees on thermometer. Turning occationally.
