A light, summery version of Chicken Dijonnaise features boneless, skinless chicken breasts. This is fabulous for entertaining or a simple weeknight meal. Easy and excellent! This low-fat version eliminates some of the oil & cheese while keeping great flavor. Serve with Herbed Orzo Pasta, provided.
Thaw completely. Heat grill to medium. Rub Chicken with Olive Oil Mixture. Grill Chicken until internal temperature reaches 165°, about 4 - 6 minutes per side. Meanwhile heat sauce in small saucepan. Simmer until it thickens and reduces by one half, about 10 – 15 minutes. Remove sauce from heat and cover until the chicken is ready. Spoon Dijonnaise Sauce over Chicken and serve with Herb Orzo Pasta. Enjoy
Herb Orzo Pasta Cooking Instructions: Bring a medium saucepan of water to boil. Add Orzo and bring back to a boil. Cook for 7 - 8 minutes until the pasta is tender. Rinse & drain in a colander. Return Orzo to saucepan. Add Vegetable/Cheese Mixture. Stir until well mixed and heated through.
