This is a quick and delicious dinner for a busy weeknight. Diced cooked chicken is combined with red and green peppers, onions, diced tomatoes, parmesan cheese and spices. Serve over white or brown rice provided. A small green salad and some crusty bread will complete the meal.
Heat a large skillet over medium/high heat. Place contents of onion bag into pan. Sauté until vegetables are soft and starting to brown. Add wine to pan, sauté for another 2 minutes. Add chicken and stir until warmed through. Add tomatoes and the parmesan cheese to pan. Stir until well combined. Turn heat down to medium and simmer for another 5 minutes. Serve over rice provided.
