This delicious dish starts with a flaky Atkins pie shell. The light filling is made with Low-fat Ricotta, Chopped Spinach, Feta and Parmesan cheeses. A small amount of whole egg binds it together. Perfect for a brunch or a light dinner with a fresh green salad.
Thaw completely. Preheat oven to 350° F. Pour contents of bag into pie shell. Place the butter pats, un-wrapped on top of the cheese/spinach mixture. Bake for 55-60 minutes or until pie is set and golden brown on top.
