Vegetarian Chili with Garlic Rice

Here are two recipes for the price of one.  A garlicky rice side dish, that is delicious by itself, combines with a hearty black bean chili.  Make enough for leftovers, it is better the next day!!

Cooking Instructions

Thaw completely. Heat a large sauce pan over medium high heat; add onions to pan and cook stirring occasionally for 5 minutes. Add spices from portion cup to pan. Stir cooking for about 1 minutes. Add vegetables to pan. Cook stirring occasionally for 5 minutes. Add tomatoes and simmer, stirring occasionally, for 20 minutes. Stir in the beans and simmer for 5 minutes.  Meanwhile in a medium saucepan, heat 1 tablespoon olive oil over med/low heat. Add rice/garlic to pan. Cook stirring for 2 minutes. Add broth to pan bring to a simmer. Reduce heat to low and cook, covered for 20 minutes. Serve chili over rice.
